Preparation
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, brown the ground beef, breaking it up as it cooks. Season with salt and pepper.
- Add the chopped onion and minced garlic to the skillet and sauté until translucent and fragrant, about 3-4 minutes.
- Stir in the cauliflower rice, diced tomatoes, and chopped bell pepper. Sprinkle in the Italian seasoning and mix well. Let it simmer for about 5 minutes.
- If using, fold in the spinach at the end until wilted.
- Transfer the mixture to a greased casserole dish, spreading it evenly.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
- Remove from the oven, let it cool slightly, and serve warm.
