  • 1 pound ground beef Use lean ground beef for best results.
  • 1 onion, chopped Any type of onion will work, but yellow onions add sweetness.
  • 2 cloves garlic, minced Fresh garlic is recommended for the best flavor.
  • 2 cups cauliflower rice Store-bought or homemade cauliflower rice may be used.
  • 1 cup diced tomatoes Canned or fresh tomatoes work well.
  • 1 bell pepper, chopped bell pepper, chopped Any color bell pepper can be used.
  • 1 teaspoon Italian seasoning Feel free to adjust the seasoning to your taste.
  • Salt and pepper to taste Season according to preference.
  • 1 cup spinach (optional) Add for extra nutrition.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, brown the ground beef, breaking it up as it cooks. Season with salt and pepper.
  3. Add the chopped onion and minced garlic to the skillet and sauté until translucent and fragrant, about 3-4 minutes.
  4. Stir in the cauliflower rice, diced tomatoes, and chopped bell pepper. Sprinkle in the Italian seasoning and mix well. Let it simmer for about 5 minutes.
  5. If using, fold in the spinach at the end until wilted.
  6. Transfer the mixture to a greased casserole dish, spreading it evenly.
  7. Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
  8. Remove from the oven, let it cool slightly, and serve warm.

Notes

This casserole can be stored in the refrigerator for up to 4 days or frozen for up to 3 months. Reheat in the oven or microwave carefully to maintain texture.
