  • 1 cup rice flour You may substitute with all-purpose flour.
  • 1 cup coconut milk
  • 1 cup water
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 tsp pandan extract Optional for enhanced flavor.

Method
 

Preparation
  1. Preheat your steamer or prepare a large pot with water for steaming.
  2. In a large mixing bowl, combine the rice flour, sugar, baking powder, and salt. Mix well to ensure even distribution.
  3. In another bowl, whisk together the coconut milk, water, vanilla extract, and pandan extract (if used) until smooth.
  4. Slowly pour the wet ingredients into the dry ingredients, mixing continuously until you have a smooth batter devoid of lumps.
  5. Lightly grease your cake mold or a heat-proof dish that fits in your steamer. Pour the batter into the prepared mold.
Cooking
  1. Place the mold in the steamer and cover it. Steam for about 25-30 minutes, or until a toothpick inserted comes out clean.
Serving
  1. Once done, carefully remove the mold from the steamer, and let it cool for a few minutes before serving. Slice and enjoy it warm or at room temperature!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to a month. Reheat gently in the microwave or steam briefly.
