Preparation
- Preheat your steamer or prepare a large pot with water for steaming.
- In a large mixing bowl, combine the rice flour, sugar, baking powder, and salt. Mix well to ensure even distribution.
- In another bowl, whisk together the coconut milk, water, vanilla extract, and pandan extract (if used) until smooth.
- Slowly pour the wet ingredients into the dry ingredients, mixing continuously until you have a smooth batter devoid of lumps.
- Lightly grease your cake mold or a heat-proof dish that fits in your steamer. Pour the batter into the prepared mold.
Cooking
- Place the mold in the steamer and cover it. Steam for about 25-30 minutes, or until a toothpick inserted comes out clean.
Serving
- Once done, carefully remove the mold from the steamer, and let it cool for a few minutes before serving. Slice and enjoy it warm or at room temperature!
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to a month. Reheat gently in the microwave or steam briefly.
