  • 3 pieces ripe bananas Ensure they are very ripe for sweetness.
  • 1/4 cup melted coconut oil Can substitute with other plant-based oils.
  • 1/2 cup brown sugar Can substitute with coconut sugar for a low-glycemic option.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon cinnamon Optional

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a loaf pan with coconut oil or line it with parchment paper.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Pour the melted coconut oil into the mashed bananas. Add the brown sugar and vanilla extract, stirring well.
  4. In a separate bowl, whisk together the baking soda, salt, flour, and cinnamon (if using).
  5. Slowly add the dry ingredients to the banana mixture. Stir gently until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Place in the preheated oven and bake for 50-60 minutes. Use a toothpick to check for doneness.
  8. Allow the banana bread to cool in the pan for about 10 minutes before transferring it to a wire rack.

Notes

Wrap tightly in plastic wrap or aluminum foil to store in the refrigerator for up to a week. Can be frozen in slices for up to three months.
