Preparation
- Rinse the chicken breasts under cold water and pat them dry with a paper towel.
- In a bowl, mix the lemon pepper seasoning with a pinch of salt and pepper. Rub this mixture evenly over the chicken breasts.
- Drizzle the olive oil at the bottom of the crockpot. Place the seasoned chicken breasts in a single layer.
- Pour the chicken broth gently around the chicken, ensuring not to wash off the seasoning.
- Lay the sliced lemons on top of the chicken.
- Cover the crockpot and set it to cook on low for about 6-8 hours or high for 3-4 hours.
- Once cooked, shred the chicken if desired or serve it whole with the lemony broth drizzled over the top.
Notes
Store leftovers in an airtight container for 3-4 days or freeze for up to 2-3 months. Reheat in a skillet or microwave with a splash of broth for moisture. Avoid overcooking by checking the internal temperature (should reach 165°F or 75°C).
