  • 4 pieces boneless, skinless chicken breasts Halal compliant
  • 1 packet lemon pepper seasoning Can substitute with dried lemon zest and cracked black pepper
  • 1 cup chicken broth
  • 1 tablespoon olive oil For preventing sticking
  • to taste salt and pepper
  • 1 piece lemon, sliced For added flavor

Method
 

Preparation
  1. Rinse the chicken breasts under cold water and pat them dry with a paper towel.
  2. In a bowl, mix the lemon pepper seasoning with a pinch of salt and pepper. Rub this mixture evenly over the chicken breasts.
  3. Drizzle the olive oil at the bottom of the crockpot. Place the seasoned chicken breasts in a single layer.
  4. Pour the chicken broth gently around the chicken, ensuring not to wash off the seasoning.
  5. Lay the sliced lemons on top of the chicken.
  6. Cover the crockpot and set it to cook on low for about 6-8 hours or high for 3-4 hours.
  7. Once cooked, shred the chicken if desired or serve it whole with the lemony broth drizzled over the top.

Notes

Store leftovers in an airtight container for 3-4 days or freeze for up to 2-3 months. Reheat in a skillet or microwave with a splash of broth for moisture. Avoid overcooking by checking the internal temperature (should reach 165°F or 75°C).
