Preparation
  1. Trim any excess fat from the beef chuck roast to ensure a leaner result.
  2. In a bowl, mix the beef with the taco seasoning until it’s fully coated with spices.
Cooking
  1. Place the chopped onion and minced garlic at the bottom of the crockpot.
  2. Put the seasoned beef on top and pour the beef broth over the meat to infuse flavor.
  3. Cover the crockpot and set it on low for approximately 8 hours or high for about 4 hours, until the beef is tender and falls apart easily.
Assembly
  1. Once cooked, use two forks to shred the beef right in the crockpot or transfer it to a bowl before pulling it apart.
  2. Warm your tortillas and fill them with the juicy shredded beef.
  3. Top with shredded lettuce, diced tomatoes, cheese, sour cream, and salsa to your liking.
  4. Enjoy with your loved ones, relishing every delicious bite!

Notes

You can use chicken or turkey in place of beef for variety. If you're short on time, the high setting on the crockpot will work, but the low setting yields richer flavors. Avoid opening the crockpot frequently, as keeping the lid on is essential for tender meat. Store leftovers in an airtight container for 3 to 4 days in the refrigerator or freeze for up to 3 months.
