  • 2 pieces bell peppers, chopped Green and red together for color
  • 1 pound ground beef or turkey Ensure it’s Halal-certified
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 14.5 ounces can of diced tomatoes, undrained
  • 4 cups beef broth Ensure it’s Halal-certified
  • 1 cup cooked rice White or brown
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large pot, heat a splash of oil over medium heat. Add the chopped onions and minced garlic, sautéing for 2-3 minutes until soft and fragrant.
  2. Add your ground beef or turkey to the pot. Cook it until browned, breaking it up into smaller pieces with a spatula—about 5-7 minutes.
  3. Toss in the chopped bell peppers and let them cook for another 3-4 minutes to soften and enhance their flavor.
  4. Stir in the can of diced tomatoes (with their juices) and the beef broth. Bring the mixture to a gentle boil.
  5. Add the cooked rice, Italian seasoning, salt, and pepper to taste, and stir everything together. Let it simmer for roughly 20 minutes to meld all those fabulous flavors together.
  6. Ladle into bowls and top with desired toppings like shredded cheese or fresh herbs. Enjoy!

Notes

Substitutions for a lighter version can include ground chicken or lentils. Prep vegetables in advance if in a rush. To avoid watery soup, don't overdo the broth.
