- In a large pot, heat a splash of oil over medium heat. Add the chopped onions and minced garlic, sautéing for 2-3 minutes until soft and fragrant.
- Add your ground beef or turkey to the pot. Cook it until browned, breaking it up into smaller pieces with a spatula—about 5-7 minutes.
- Toss in the chopped bell peppers and let them cook for another 3-4 minutes to soften and enhance their flavor.
- Stir in the can of diced tomatoes (with their juices) and the beef broth. Bring the mixture to a gentle boil.
- Add the cooked rice, Italian seasoning, salt, and pepper to taste, and stir everything together. Let it simmer for roughly 20 minutes to meld all those fabulous flavors together.

Notes
