  1. Start by chopping the bell peppers, onion, and mincing the garlic.
Cooking
  1. In a large pot over medium heat, add the ground turkey. Use a wooden spoon to break it apart as it cooks. Stir occasionally until browned (about 5-7 minutes).
  2. Toss in the chopped onions and minced garlic to the pot. Sauté these for about 2-3 minutes or until the onions are translucent and fragrant.
  3. Next, add the chopped bell peppers to the mix and cook for another 5 minutes. The peppers will soften slightly during this time.
  4. Pour in the tomato sauce and chicken broth. Stir everything well to combine the flavors, and let it simmer for about 10 minutes.
  5. If you prefer the added texture of rice, toss in the cooked rice and let it simmer for an additional 5 minutes.
  6. Taste your soup and season with salt, pepper, and Italian seasoning to your liking.
  7. Ladle the soup into bowls, and add any desired toppings like shredded cheese or fresh herbs. Enjoy while hot!

Notes

For a vegetarian option, consider using lentils or chickpeas in place of ground turkey. Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze in individual portions for up to 3 months.
