Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy, about 2-3 minutes.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
  5. Gently fold in the chopped strawberries until evenly distributed.
  6. Drop rounded tablespoons of cookie dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
Baking
  1. Bake for 10-12 minutes or until the edges are lightly golden.
  2. Remove from the oven and let the cookies cool on the sheet for 5 minutes before transferring them to a wire rack to cool completely.
