Main Ingredients
  • 2 cups fresh blackberries You can substitute with frozen if needed.
  • 1 cup all-purpose flour
  • 1 cup sugar Divided into two parts.
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • ½ cup unsalted butter Melted.
  • 1 teaspoon vanilla extract
  • Optional: cinnamon for sprinkling

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, lightly toss the blackberries with 1/4 cup of sugar and set aside while you prepare the batter.
  3. In a separate mixing bowl, whisk together the flour, remaining sugar, baking powder, and salt. Gradually add the milk and stir until combined. Finally, fold in the melted butter and vanilla until smooth.
  4. Melt 2 tablespoons of butter in a cast-iron skillet over medium heat. Pour the batter into the skillet and then spoon the blackberries over the top.
Baking
  1. Place the skillet in the preheated oven and bake for about 30-35 minutes or until the top is golden brown and a toothpick inserted comes out clean.
Serving
  1. Allow it to cool slightly before serving. Pair it with a scoop of ice cream or a dollop of whipped cream for an irresistible finish!

Notes

Store leftovers in the refrigerator in an airtight container for up to 3 days. To reheat, place in a preheated oven at 350°F (175°C) for about 10-15 minutes. Freeze for up to 2 months if needed.
