Method
Cooking the Pasta
- Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Remember to reserve about 1/2 cup of the pasta water before draining.
Sautéing the Shrimp
- In a large skillet over medium heat, add the olive oil. Once it's hot, toss in the minced garlic and sauté for about 1 minute until fragrant (don’t let it burn!).
- Add the shrimp, season with salt and pepper, and cook until they turn pink—about 2-3 minutes per side.
Making the Sauce
- Pour in the chicken broth and lemon juice. Stir well, and let it simmer for a minute or two.
Combining the Ingredients
- Add the drained pasta into the skillet and toss everything together. If the mixture seems a bit dry, add a splash of the reserved pasta water until you achieve the desired consistency.
Finishing the Dish
- Sprinkle the chopped parsley on top and red pepper flakes if using. Give everything a final toss, and your dish is ready to impress.
Notes
For shrimp substitutions, you can swap it for halal chicken breast and follow the same recipe. For a creamier version, consider adding a splash of heavy cream after adding the broth.
