  • 1 pound Kielbasa, sliced into bite-sized pieces
  • 2 cups Bell peppers, mixed colors, sliced
  • 1 large Zucchini, sliced
  • 1 large Onion, sliced
Seasoning and Oil
  • 2 tablespoons Olive oil
  • 2 teaspoons Italian seasoning
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Slice the bell peppers, zucchini, and onion into bite-sized pieces.
  3. In a large bowl, combine the sliced kielbasa and veggies. Drizzle with olive oil and sprinkle the Italian seasoning, salt, and pepper. Toss everything until well-coated.
  4. Transfer the mixed ingredients onto a large baking sheet, spreading them out in a single layer for even cooking.
Cooking
  1. Place the sheet pan in the preheated oven and bake for 25-30 minutes, tossing halfway through for even browning. You'll know it's done when the veggies are tender and slightly caramelized.
Serving
  1. Remove from the oven and serve warm. Enjoy the savory goodness with your family!

Notes

Feel free to swap out or add veggies based on your preference—broccoli, asparagus, or even carrots can work wonderfully! If you like a little heat, you can add a pinch of red pepper flakes to the mix.
