  • 8 oz pasta (e.g., penne or fettuccine)
  • 1 lb halal sausage (Italian or your preferred type)
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/2 cup grated Parmesan cheese Plus extra for serving
  • Salt and pepper to taste
  • Red pepper flakes (optional) For added heat

Method
 

Cooking Pasta
  1. In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain the pasta and set it aside.
Sautéing Sausage
  1. In the same pot or a large skillet, heat the olive oil over medium heat. Add the halal sausage, breaking it up into bite-sized pieces with a spatula. Cook until browned and cooked through, about 5-7 minutes.
Adding Vegetables
  1. Toss in the asparagus and minced garlic. Sauté for another 3-4 minutes, until the asparagus is tender but still bright green.
Combining Ingredients
  1. Return the drained pasta to the pot with the sausage and asparagus. Add a splash of the reserved pasta water to loosen the mixture. Stir in the grated Parmesan cheese, salt, and pepper to taste. Sprinkle in some red pepper flakes if desired.
Serving
