- Heat the vegetable oil in a pan over medium heat.
- Add the diced onion and cook until it becomes translucent, about 3-4 minutes.
- Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.
- Add the cooked pinto beans to the pan and stir everything together.
- Use a masher or fork to mash the beans to your desired consistency (smooth or slightly chunky).
- If the mixture seems too thick, add a splash of water to achieve your preferred texture.
- Sprinkle in the cumin, salt, and pepper, and adjust seasoning to taste.
- Reduce the heat to low and let the beans cook for a few more minutes to heat through.
- Serve your Easy Refried Beans warm.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 5 days. Can be frozen for about a month. Reheat in a saucepan over medium heat, adding water if necessary for consistency.
