  • 2 cups cooked pinto beans (canned or homemade)
  • 1/4 cup onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil Can substitute with olive oil or avocado oil.
  • 1 teaspoon cumin
  • to taste salt
  • to taste pepper

Method
 

Preparation
  1. Heat the vegetable oil in a pan over medium heat.
  2. Add the diced onion and cook until it becomes translucent, about 3-4 minutes.
  3. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.
  4. Add the cooked pinto beans to the pan and stir everything together.
  5. Use a masher or fork to mash the beans to your desired consistency (smooth or slightly chunky).
  6. If the mixture seems too thick, add a splash of water to achieve your preferred texture.
  7. Sprinkle in the cumin, salt, and pepper, and adjust seasoning to taste.
  8. Reduce the heat to low and let the beans cook for a few more minutes to heat through.
  9. Serve your Easy Refried Beans warm.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 5 days. Can be frozen for about a month. Reheat in a saucepan over medium heat, adding water if necessary for consistency.
