- In a large skillet, heat the olive oil over medium heat.
- Once hot, add the chopped onions and sauté for about 3-5 minutes until they become translucent.
- Add the minced garlic and cook for another minute, stirring frequently to avoid burning.
- Next, add the cooked pinto beans to the skillet. Mash them directly in the pan or transfer to a bowl for easier mashing.
- Sprinkle in the cumin, salt, and pepper. Mix everything together thoroughly and allow to cook for another 5-7 minutes.
- If the mixture feels too dry, add a splash of water to reach desired creaminess. Mash for chunkier beans if preferred.
- Serve warm, keeping covered until ready to enjoy.
Notes
Store leftovers in an airtight container for up to 5 days. For longer storage, freeze for up to 3 months. Reheat gently with a splash of water or olive oil.
