Method
 

Preparation
  1. In a large skillet, heat the olive oil over medium heat.
  2. Once hot, add the chopped onions and sauté for about 3-5 minutes until they become translucent.
  3. Add the minced garlic and cook for another minute, stirring frequently to avoid burning.
  4. Next, add the cooked pinto beans to the skillet. Mash them directly in the pan or transfer to a bowl for easier mashing.
  5. Sprinkle in the cumin, salt, and pepper. Mix everything together thoroughly and allow to cook for another 5-7 minutes.
  6. If the mixture feels too dry, add a splash of water to reach desired creaminess. Mash for chunkier beans if preferred.
  7. Serve warm, keeping covered until ready to enjoy.

Notes

Store leftovers in an airtight container for up to 5 days. For longer storage, freeze for up to 3 months. Reheat gently with a splash of water or olive oil.
