Preparation
  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Stir in the minced garlic and ground cumin, cooking for another minute until fragrant.
  2. Toss the drained and rinsed pinto beans into the skillet. Stir everything together, ensuring the beans are coated in the oil and aromatics.
  3. Using a potato masher or fork, lightly mash the beans to your desired consistency. Keep cooking for about 5-7 minutes, stirring occasionally.
  4. Season with salt and pepper to taste, adjusting as necessary. Add cayenne or chili powder for extra heat, if desired.
  5. Remove skillet from heat and serve warm. Top with fresh herbs, cheese, or barbecue sauce if you like.

Notes

For variations, you can substitute pinto beans with black beans or white beans. To achieve a creamier consistency, add vegetable broth or water while cooking. Stir occasionally to prevent sticking.
