Preparation
- Crumble the cooled red velvet cake into fine crumbs in a mixing bowl.
- Add the softened cream cheese to the crumbled cake and mix until well combined and shapeable.
- Scoop out about a tablespoon of the mixture and roll it into a ball. Repeat until all the mixture is used, placing truffles on a parchment-lined tray.
- Refrigerate the rolled truffles for 15-20 minutes to firm up.
Coating and Decoration
- Melt the white chocolate chips in a microwave or double boiler until smooth.
- Dip each chilled truffle into the melted chocolate and place them back on the parchment-lined tray.
- Before the chocolate sets, sprinkle cocoa powder and decorative sprinkles on top.
- Allow the chocolate coating to harden in the refrigerator for another 15 minutes.

Notes
