Easy Protein Cinnamon Rolls

Ingredients
  

Dough Ingredients
  • 1 cup protein powder Choose your favorite protein powder
  • 2 cups whole wheat flour Can substitute with all-purpose flour
  • 1/2 cup Greek yogurt
  • 1/2 cup almond milk
  • 1/4 cup honey
  • 2 teaspoons cinnamon Plus additional for filling
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup raisins or nuts Optional for added texture
Topping
  • 1/2 cup icing For drizzling, optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the protein powder, whole wheat flour, baking powder, cinnamon, and salt. Mix well.
  3. Add the Greek yogurt, almond milk, and honey to the dry ingredients, and mix until a dough forms. If using nuts or raisins, fold them in now.
  4. Lightly flour a clean surface and knead the dough for about 2-3 minutes until smooth.
  5. Roll out the dough into a rectangular shape about 1/4 inch thick.
  6. Sprinkle an additional teaspoon of cinnamon and a little extra honey over the dough.
  7. Starting from one edge, roll the dough into a tight log.
  8. Slice the log into 12 pieces using a sharp knife.
Baking
  1. Arrange the cut rolls in a greased baking dish.
  2. Bake for about 15-18 minutes, or until golden brown.
  3. Allow to cool for a couple of minutes before drizzling with icing if desired.

Notes

Store any leftovers in an airtight container in the fridge for up to 3 days. For longer storage, freeze wrapped individually for up to 3 months. To reheat, microwave for 15 seconds or oven at 350°F for 5-10 minutes.
