  • 2 tablespoons olive oil (extra virgin for a touch of richness)
  • 1 teaspoon garlic powder (optional, for extra flavor)
  • Freshly ground black pepper (to taste)

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C) to ensure the mushrooms caramelize properly.
  2. Clean the mushrooms with a damp cloth and cut them in half if they are large for even cooking.
Making the Glaze
  1. In a large mixing bowl, whisk together the soy sauce, honey, olive oil, garlic powder, and black pepper until well combined.
Coating the Mushrooms
  1. Add the cleaned mushrooms to the bowl and toss until they are well coated with the glaze.
Roasting
  1. Spread the mushrooms evenly on a parchment-lined baking sheet, ensuring they are not overcrowded.
  2. Roast in the preheated oven for about 20-25 minutes, stirring halfway through to ensure even cooking.
Serving
  1. Once done, remove the mushrooms from the oven and let them cool slightly before serving.

Notes

For gluten-free, substitute soy sauce with tamari or try coconut aminos for a healthier alternative. Store leftovers in an airtight container for up to 3 days in the fridge or freeze for up to 2 months. Reheat at 350°F (175°C) for 10 minutes.
