  • 1 pound boneless, skinless chicken breasts, sliced thinly
  • 1 each red bell pepper, sliced
  • 1 each yellow bell pepper, sliced
  • 1 each green bell pepper, sliced
  • 1 large onion, sliced
  • 3 tablespoons olive oil
  • 2 teaspoons taco seasoning (homemade or store-bought)
  • to taste salt and pepper
  • Flour or corn tortillas, for serving

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the sliced chicken, bell peppers, and onion. Drizzle with olive oil and sprinkle the taco seasoning, salt, and pepper. Toss everything together until well coated.
  3. Spread the chicken and veggie mixture evenly on a large baking sheet lined with parchment paper.
Cooking
  1. Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through, and the veggies are tender and slightly charred.
  2. Once done, remove from the oven, and let it cool for a minute.
Serving
  1. Serve the warm chicken and veggies in tortillas and add your favorite toppings!

Notes

For added flavor, marinate the chicken in olive oil and taco seasoning for about 30 minutes before cooking. Feel free to experiment with different veggies, and ensure to use fresh tortillas for the best taste.
