  • 1 can white beans (such as cannellini or navy beans), drained and rinsed
  • 2 cups leafy greens (such as spinach or kale), chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon lemon juice

Cooking Instructions
  1. In a medium-sized skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté for about 1-2 minutes until fragrant. Make sure it doesn’t burn.
  2. Stir the rinsed white beans into the skillet, mixing them well with the garlic. Let them cook for about 3-4 minutes to absorb the flavors.
  3. Fold in the chopped leafy greens and continue to cook for another 3-5 minutes until they have wilted, reducing in size and intensifying their flavor.
  4. Add lemon juice, salt, and pepper to taste. If you enjoy a bit of heat, this is the perfect moment to sprinkle in some red pepper flakes.
  5. Once everything is combined and heated through, serve your hearty dish garnished with fresh herbs if desired.

Notes

This dish can be stored in an airtight container in the refrigerator for up to 3 days. It freezes well for up to 3 months. When reheating, add a splash of water or broth if necessary to maintain creaminess.
