Ingredients

Main Ingredients
  • 4 pieces boneless, skinless chicken breasts
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons Italian seasoning
  • 1 tablespoon olive oil For cooking
  • to taste Salt and pepper
  • for garnish Fresh parsley

Method

Preparation
  1. Begin by patting your chicken breasts dry with paper towels; this helps achieve a lovely sear.
  2. Season both sides of the chicken with salt and pepper.
Searing the Chicken
  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Carefully lay the chicken breasts into the skillet and cook undisturbed for about 6-7 minutes on one side, until a golden-brown crust forms.
  3. Flip the chicken over and cook for another 6-7 minutes, or until cooked through.
  4. Remove the chicken and set aside.
Making the Sauce
  1. In the same skillet, add the minced garlic and sauté for about 30 seconds, until fragrant.
  2. Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let it simmer for 2 minutes.
Adding Cream and Cheese
  1. Reduce the heat to low, then stir in the heavy cream and Parmesan cheese, whisking until smooth.
  2. Add the Italian seasoning to create a beautifully creamy sauce.
Combining
  1. Return the chicken to the skillet, covering it well in that delicious sauce.
  2. Allow it to cook for an additional 3-4 minutes to ensure everything is heated throughout.
Serve
  1. Garnish with fresh parsley before serving!
  2. Enjoy with warm crusty bread to scoop up that heavenly sauce.

Notes

Tip: Substitute boneless, skinless thighs for dark meat, or use dairy-free cream for a lactose-free version. Keep an eye on the chicken to prevent overcooking; the internal temperature should reach 165°F.
