Ingredients
  

Cheeses
  • 8 ounces mozzarella cheese, cubed
  • 4 ounces feta cheese, cubed
Meat
  • 4 ounces salami, sliced into strips
Vegetables
  • 1 cup green olives, pitted and halved
Marinade
  • 1/4 cup olive oil
  • 1 tablespoon Italian seasoning (or mixed dried herbs)
  • 1 teaspoon red pepper flakes (optional)
For Garnish
  • to taste fresh parsley for garnish

Method
 

Preparation
  1. Cube the mozzarella and feta cheese. Slice the salami into strips and halve the green olives.
Marinade
  1. In a medium bowl, mix together the olive oil, Italian seasoning, and red pepper flakes (if using). Whisk until well combined.
Combine Ingredients
  1. Place the cubed cheeses, salami, and olives into the bowl with the marinade. Gently toss until all the ingredients are coated evenly.
Marinating
  1. Set the mixture aside to marinate for at least 15 minutes, or longer for more intense flavors.
Serve
  1. Transfer the marinated appetizer to a serving platter and garnish with fresh parsley. Enjoy with toothpicks.

Notes

For variations, substitute mozzarella or feta with gouda or goat cheese. Omit salami or replace it with marinated artichokes for a vegetarian version. This dish can be prepared a few hours in advance for optimal taste, and leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
