  • 8 ounces short pasta (like fusilli or penne) Cook according to package directions.
  • 4 cups arugula Washed.
  • 1/4 cup lemon juice Freshly squeezed.
  • 1/4 cup olive oil Extra virgin.
  • 1/2 cup parmesan cheese Freshly grated or use vegan alternative.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Cooking Pasta
  1. Bring a large pot of salted water to a boil. Add your pasta and cook according to package directions until al dente, typically about 8-10 minutes. Drain and rinse under cold water to stop cooking.
Preparing Dressing
  1. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
Combining Ingredients
  1. In a large mixing bowl, add the cooled pasta, arugula, and half of the grated parmesan cheese. Pour the dressing over the top and toss gently until everything is well-coated.
Final Touches
  1. Give your salad a taste and adjust seasoning as desired, possibly adding more lemon juice for extra zing.
  2. Transfer the salad to a serving dish and sprinkle the remaining parmesan on top. Serve immediately, or let it chill in the refrigerator for about 30 minutes for more flavor.

Notes

For best results, prepare this salad just before serving to prevent wilting the arugula. Store in an airtight container for up to three days. Reheat with a bit of olive oil to restore moisture.
