  • 1 lb chicken breast, diced Make sure your chicken is halal.
  • 1 cup gnocchi
  • 4 cups chicken broth
  • 1 cup fresh spinach Can substitute with kale.
  • 1 cup diced tomatoes Can use canned or fresh.
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Method
 

Preparation
  1. In a large pot, heat a tablespoon of olive oil over medium heat.
  2. Add the chopped onion and sauté until it becomes translucent (about 5 minutes).
  3. Add minced garlic and sauté for another minute until fragrant.
Cooking
  1. Add the diced chicken breast to the pot. Season with salt, pepper, and Italian seasoning.
  2. Cook for about 5-7 minutes until the chicken is no longer pink, stirring occasionally.
  3. Pour in the chicken broth and diced tomatoes, bringing the mixture to a boil.
  4. Once boiling, add gnocchi to the pot, reduce heat, and simmer for about 3-5 minutes until the gnocchi is tender and floating to the top.
  5. Stir in the fresh spinach and cook for an additional minute until wilted.
