Preparation
- In a large mixing bowl, season the chicken chunks with salt, pepper, and olive oil. Drizzle in the barbecue sauce and mix to ensure the chicken is well coated. Let it marinate for about 15 minutes for maximum flavor.
- Pre-soak wooden skewers in water for 30 minutes to prevent burning. Thread the marinated chicken and fresh pineapple chunks onto the skewers. Feel free to add optional veggies between the chicken and pineapple for an extra punch!
Grilling
- Preheat your grill to medium-high heat. If you’re using a grill pan on the stovetop, heat it over medium-high heat.
- Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally until the chicken reaches an internal temperature of 165°F. The pineapple should get nice char marks.
Serving
- Remove the skewers from the grill, let them rest for a minute or two, then serve warm with additional barbecue sauce on the side for dipping.
Notes
