Preparation
- Start by washing the strawberries thoroughly. Remove the stems and hulls before slicing them into smaller pieces.
- In a blender or food processor, combine the sliced strawberries, honey (or maple syrup), and vanilla extract. Blend until smooth, leaving a few bits of strawberry for texture if desired.
- In a large mixing bowl, combine the blended strawberry mixture with the Greek yogurt. Stir gently until well combined, ensuring that the yogurt remains light and fluffy.
- Pour the mixture into a freezer-safe container, smoothing the top with a spatula. Optionally, sprinkle some extra strawberry pieces on top for decoration.
- Cover with a lid or plastic wrap and place in the freezer for at least 4 to 6 hours, or until set.
- When ready to enjoy, scoop out the ice cream and serve in bowls. Optionally top with more sliced strawberries or a drizzle of honey.
Notes
This ice cream keeps well in the freezer for up to two weeks. Store in an airtight container to prevent freezer burn. Allow to sit at room temperature for 5-10 minutes before scooping for ease.
