Ingredients
  

For the Marinade
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice Freshly squeezed for best flavor.
  • 2 tablespoons red wine vinegar Substitute with an extra 2 tablespoons of lemon juice for halal compliance.
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
Main Ingredients
  • 1 lb chicken breast, cut into cubes
  • Skewers (wooden or metal) Soak wooden skewers in water if using.

Method
 

Preparation
  1. In a large bowl, mix together the olive oil, lemon juice, minced garlic, dried oregano, dried thyme, salt, and pepper.
  2. Add the chicken breast cubes to the marinade, ensuring every piece is well coated. Cover and let it marinate in the refrigerator for at least 30 minutes or up to 4 hours.
  3. If using wooden skewers, soak them in water for about 30 minutes.
Grilling
  1. Thread the marinated chicken onto the skewers, leaving space between each piece.
  2. Preheat the grill to medium-high (about 375°F).
  3. Place the skewers on the grill and cook for about 12-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  4. Remove from the grill, let rest for a few minutes, and serve hot.

Notes

For different proteins, feel free to swap chicken for beef, lamb, or even tofu for a vegetarian option. Ensure the grill is hot enough and avoid flipping the kabobs too often for beautiful grill marks.
