Preparation
- In a large bowl, mix together the olive oil, lemon juice, minced garlic, dried oregano, dried thyme, salt, and pepper.
- Add the chicken breast cubes to the marinade, ensuring every piece is well coated. Cover and let it marinate in the refrigerator for at least 30 minutes or up to 4 hours.
- If using wooden skewers, soak them in water for about 30 minutes.
Grilling
- Thread the marinated chicken onto the skewers, leaving space between each piece.
- Preheat the grill to medium-high (about 375°F).
- Place the skewers on the grill and cook for about 12-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Remove from the grill, let rest for a few minutes, and serve hot.
Notes
For different proteins, feel free to swap chicken for beef, lamb, or even tofu for a vegetarian option. Ensure the grill is hot enough and avoid flipping the kabobs too often for beautiful grill marks.
