  • 1/2 cup Gorgonzola cheese, crumbled
  • 2 tablespoons butter
  • 1 clove garlic, minced

Method
 

Preparation
  1. In a medium saucepan, melt the butter over medium heat until bubbly but not browned.
  2. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to let it burn.
  3. Pour in the heavy cream and stir constantly, allowing it to simmer for about 5 minutes until slightly thickened.
  4. Reduce heat to low and gradually add the crumbled Gorgonzola cheese, stirring until melted and smooth (about 2 minutes).
  5. Season with salt and pepper to taste, keeping in mind that Gorgonzola is salty.
  6. Garnish with freshly chopped parsley if desired and serve warm over your favorite dish.

Notes

For lighter options, substitute half-and-half for some of the cream or use a lower-fat cheese. Ensure garlic does not brown to avoid a bitter taste. Stir continuously when adding cheese to prevent clumping.
