- In a medium saucepan, melt the butter over medium heat until bubbly but not browned.
- Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to let it burn.
- Pour in the heavy cream and stir constantly, allowing it to simmer for about 5 minutes until slightly thickened.
- Reduce heat to low and gradually add the crumbled Gorgonzola cheese, stirring until melted and smooth (about 2 minutes).
- Season with salt and pepper to taste, keeping in mind that Gorgonzola is salty.
- Garnish with freshly chopped parsley if desired and serve warm over your favorite dish.
Notes
For lighter options, substitute half-and-half for some of the cream or use a lower-fat cheese. Ensure garlic does not brown to avoid a bitter taste. Stir continuously when adding cheese to prevent clumping.
