  • 1/2 cup bell peppers (diced)
  • 1/2 cup shredded cheese (cheddar or mozzarella) Use any preferred shredded cheese.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a muffin tin with cooking spray or line with muffin papers.
  3. In a large mixing bowl, combine the eggs and cottage cheese and whisk until well-blended.
  4. Gently fold in the chopped spinach, diced bell peppers, and shredded cheese. Season with salt and pepper to taste.
  5. Pour the mixture evenly into the muffin tin, filling each cup about three-quarters full.
  6. Bake for 20-25 minutes until they are set and lightly golden on top.
  7. Let the muffins cool in the tin for a few minutes before transferring to a wire rack.
