Preparation
- Cook your rice according to package instructions. This will take about 15-20 minutes.
- Heat a large skillet over medium-high heat and add the ground beef, breaking it apart as it cooks. Cook until browned for about 5-7 minutes.
- Add the sliced mushrooms to the skillet and season with salt and pepper. Cook for about 3-4 minutes until the mushrooms are tender.
- Sprinkle the curry powder over the beef and mushrooms, mixing well to coat everything.
- Pour in the coconut milk, and stir in the peanut butter and soy sauce. Let it simmer for about 5 minutes.
- Fluff the rice with a fork and divide it among bowls. Top with the curried beef and mushroom mixture.
- Finish by adding diced mango on top and sprinkle with chopped cilantro.
Notes
If you have leftovers, store in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over medium heat or in the microwave.
