  • 1 lb ground beef can substitute with ground turkey or chicken
  • 8 oz mushrooms, sliced
  • 1 cup cooked rice (white or brown) cook according to package instructions
  • 1 can coconut milk
  • 2 tablespoons curry powder
  • 2 tablespoons peanut butter can substitute with almond butter
  • 1 tablespoon soy sauce
  • 1 ripe mango, diced
  • to taste salt and pepper
  • chopped cilantro for garnish

Method
 

Preparation
  1. Cook your rice according to package instructions. This will take about 15-20 minutes.
  2. Heat a large skillet over medium-high heat and add the ground beef, breaking it apart as it cooks. Cook until browned for about 5-7 minutes.
  3. Add the sliced mushrooms to the skillet and season with salt and pepper. Cook for about 3-4 minutes until the mushrooms are tender.
  4. Sprinkle the curry powder over the beef and mushrooms, mixing well to coat everything.
  5. Pour in the coconut milk, and stir in the peanut butter and soy sauce. Let it simmer for about 5 minutes.
  6. Fluff the rice with a fork and divide it among bowls. Top with the curried beef and mushroom mixture.
  7. Finish by adding diced mango on top and sprinkle with chopped cilantro.

Notes

If you have leftovers, store in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over medium heat or in the microwave.
