Ingredients
  

  • 4 cups shredded green cabbage
  • 1 cup shredded carrots
  • 2 green onions sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon honey or sugar
  • ½ teaspoon ginger grated
  • 1 teaspoon sesame seeds optional
  • ¼ cup chopped peanuts or almonds optional, for extra crunch

Method
 

  1. Prepare the vegetables:
  2. In a large mixing bowl, combine shredded cabbage, carrots, and sliced green onions.
  3. Make the dressing:
  4. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, and grated ginger until well combined.
  5. Toss the salad:
  6. Pour the dressing over the vegetables and toss until evenly coated.
  7. Add toppings:
  8. Sprinkle sesame seeds and chopped nuts on top for added texture and flavor.
  9. Serve:
  10. Serve immediately for maximum crunch, or chill in the refrigerator for 15–30 minutes for a more marinated flavor.

Notes

For a spicier version, add a dash of sriracha or red pepper flakes to the dressing.
Can be prepared a few hours ahead, but the cabbage may soften slightly over time.
Substitute or add other veggies like bell peppers or red cabbage for color and variety.
Great as a side for Asian-inspired dishes like teriyaki chicken or dumplings.
