Ingredients

  • 1 pound ground beef
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
Spices and Seasonings
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • to taste Salt and pepper

Method
 

Preparation
  1. In a skillet over medium heat, brown the ground beef until it’s fully cooked, about 5-7 minutes. Drain any excess fat.
  2. In your crockpot, add the browned beef, kidney beans, black beans, diced tomatoes, tomato sauce, chopped onion, and minced garlic.
  3. Sprinkle the chili powder, cumin, salt, and pepper over the mixture and stir well.
Cooking
  1. Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours.
Serving
  1. Once the chili is done, taste it and adjust the seasoning if needed. Serve hot with your choice of garnishes.

Notes

For substitutions, ground turkey or chicken can be used instead of beef. For a vegetarian option, use lentils or more beans. Store leftovers in an airtight container for up to 4 days in the fridge or freeze for up to 3 months.
