  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14 oz) crushed tomatoes
  • 1 can (6 oz) tomato paste
  • 2 tablespoons Italian seasoning
  • 8 oz pasta (your choice) (like bowtie or rotini)
  • 1 cup heavy cream
  • 1.5 cups ricotta cheese
  • 1.5 cups shredded mozzarella cheese
  • Fresh basil, for garnish

Cooking Steps
  1. In a large pot, cook the ground beef (or sausage) over medium heat until browned. Drain excess fat if necessary.
  2. Add diced onion and minced garlic to the pot, cooking until softened and fragrant—about 3-4 minutes.
  3. Pour in the chicken broth, crushed tomatoes, and tomato paste. Stir to combine. Season with Italian seasoning and bring to a simmer.
  4. Add the pasta to the soup. Let it cook according to the package instructions until al dente, usually around 8-10 minutes.
  5. Once the pasta is cooked, lower the heat and add the heavy cream, stirring until well mixed.
  6. Add the ricotta and mozzarella cheese, stirring until creamy. Cook for an additional 2-3 minutes until warmed through.
