Preparation
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the vanilla cake mix, eggs, vegetable oil, and water. Mix well until smooth.
- Crush half of the chocolate sandwich cookies and fold them into the batter.
Baking
- Grease two 9-inch round cake pans and pour the batter evenly into each.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
Whipped Cream Preparation
- While the cake is baking, whip the heavy cream and vanilla extract together until soft peaks form. Set aside for assembly.
Cooling and Assembly
- Once the cakes are baked, let them cool in the pans for about 10 minutes before transferring them to a wire rack.
- Layer the cakes with whipped cream in between, and top with the remaining crushed chocolate cookies.
- Dust the top of the cake with powdered sugar before serving.
Notes
For a twist, try using a different flavor of cake mix. Make sure cakes are cooled completely before frosting. Don’t skip crushing the cookies for flavor and texture!
