Preparation
- Preheat your oven to 350°F (175°C) and let it warm up while you prepare your dough.
- In a large bowl, combine flour, sugar, baking powder, salt, and ground cinnamon. Stir until well mixed.
- In a separate bowl, whisk together milk, vegetable oil, eggs, and vanilla until thoroughly combined.
- Gradually add the wet ingredients to the dry mixture, mixing until just combined. Take care not to overmix; a few lumps are okay!
- In a small bowl, combine brown sugar and cinnamon.
Baking
- Pour half of the batter into a greased loaf pan. Sprinkle half of the cinnamon mixture over it.
- Add the remaining batter and top with the leftover cinnamon mixture. Use a knife to swirl the mixture gently.
- Place the loaf pan in the preheated oven and bake for 40-50 minutes or until a toothpick inserted into the center comes out clean.
- Allow the Easy Cinnamon Bread to cool for about 10 minutes in the pan before transferring it to a wire rack to cool completely.
Notes
For gluten-free options, use a gluten-free all-purpose blend. Avoid opening the oven door in the first 25 minutes of baking to prevent a sunken loaf. Ensure all ingredients are at room temperature for better results. Store in an airtight container at room temperature for up to 4 days or freeze for longer storage.
