Ingredients
  

For the batter
  • 2.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup milk (or any non-dairy alternative) Ensure non-dairy options are Halal-certified
  • 1/2 cup vegetable oil (or melted coconut oil)
  • 2 large eggs
  • 1 teaspoon vanilla extract
For the cinnamon filling
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and let it warm up while you prepare your dough.
  2. In a large bowl, combine flour, sugar, baking powder, salt, and ground cinnamon. Stir until well mixed.
  3. In a separate bowl, whisk together milk, vegetable oil, eggs, and vanilla until thoroughly combined.
  4. Gradually add the wet ingredients to the dry mixture, mixing until just combined. Take care not to overmix; a few lumps are okay!
  5. In a small bowl, combine brown sugar and cinnamon.
Baking
  1. Pour half of the batter into a greased loaf pan. Sprinkle half of the cinnamon mixture over it.
  2. Add the remaining batter and top with the leftover cinnamon mixture. Use a knife to swirl the mixture gently.
  3. Place the loaf pan in the preheated oven and bake for 40-50 minutes or until a toothpick inserted into the center comes out clean.
  4. Allow the Easy Cinnamon Bread to cool for about 10 minutes in the pan before transferring it to a wire rack to cool completely.

Notes

For gluten-free options, use a gluten-free all-purpose blend. Avoid opening the oven door in the first 25 minutes of baking to prevent a sunken loaf. Ensure all ingredients are at room temperature for better results. Store in an airtight container at room temperature for up to 4 days or freeze for longer storage.
