Preparation
- Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with muffin liners.
- In a large mixing bowl, whisk together the melted butter, granulated sugar, and eggs until well combined. Then, mix in the vanilla extract and milk.
- In another bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be cautious not to overmix.
- Gently fold in the diced apples into the muffin batter.
- Using a spoon or ice cream scoop, divide the batter evenly among the muffin cups, filling each about 2/3 full.
Baking
- Bake in the preheated oven for 15-20 minutes or until a toothpick inserted in the center comes out clean.
- Once baked and golden, remove the muffins from the oven and brush them with melted butter. Roll the muffins in the cinnamon-sugar mixture for that sweet, crunchy finish.
