Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the softened butter, egg, and the cake mix. Stir until well blended and the mixture is smooth and creamy.
- Mix in the teaspoon of vanilla extract.
- Using a tablespoon or a cookie scoop, scoop the cookie dough onto a parchment-lined baking sheet, spaced about 2 inches apart.
- Generously sprinkle powdered sugar over each cookie before baking.
Baking
- Place the baking sheet in the preheated oven and bake for 10-12 minutes until slightly golden around the edges but gooey in the center.
- Once baked, allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
To keep cookies fresh, store in an airtight container at room temperature for up to a week. Refrigerate for two weeks or freeze for three months. To reheat, microwave for 10-15 seconds.
