Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt. Set this mixture aside.
- In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
- Beat in the egg and vanilla extract until well combined.
- Gradually mix in the dry ingredients, alternating with the cooled brewed coffee, until everything is well incorporated.
Baking
- Using a tablespoon or a cookie scoop, drop the batter onto the lined baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the cakes spring back when gently pressed. Let them cool for about 5 minutes on the baking sheet before transferring to a wire rack to cool completely.
Making the Filling
- In a bowl, combine powdered sugar and whipped cream. Whip until you reach a soft peak.
Assembling the Whoopie Pies
- Pair cakes of similar size and spread the filling on the flat side of one. Top with the other cake, flat side down.
- Enjoy immediately or store in an airtight container for later.

Store in the refrigerator for up to a week or freeze for up to three months. For warming, microwave for 10 seconds if desired.
