Ingredients
  

For the Cakes
  • 1 cup all-purpose flour Make sure to measure accurately for best results
  • 1/2 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt Optional for enhancing flavor
  • 1/2 cup unsalted butter, softened Use plant-based butter for dairy-free option
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup brewed coffee, cooled
For the Filling
  • 1 cup powdered sugar
  • 1/2 cup unsweetened whipped cream Use coconut cream for a dairy-free version

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt. Set this mixture aside.
  3. In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually mix in the dry ingredients, alternating with the cooled brewed coffee, until everything is well incorporated.
Baking
  1. Using a tablespoon or a cookie scoop, drop the batter onto the lined baking sheet, spacing them about 2 inches apart.
  2. Bake for 10-12 minutes, or until the cakes spring back when gently pressed. Let them cool for about 5 minutes on the baking sheet before transferring to a wire rack to cool completely.
Making the Filling
  1. In a bowl, combine powdered sugar and whipped cream. Whip until you reach a soft peak.
Assembling the Whoopie Pies
  1. Pair cakes of similar size and spread the filling on the flat side of one. Top with the other cake, flat side down.
  2. Enjoy immediately or store in an airtight container for later.

Notes

Store in the refrigerator for up to a week or freeze for up to three months. For warming, microwave for 10 seconds if desired.
