  • 1 lb chicken breast, sliced
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
Sauce and Seasoning
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste

Method
 

Preparation
  1. Slice the chicken breast into thin strips to ensure even cooking.
  2. In a large skillet or wok, add the olive oil and heat over medium-high heat until it shimmers.
Cooking
  1. Add the chicken strips to the skillet in a single layer. Cook for about 5-7 minutes, stirring occasionally, until golden brown and fully cooked.
  2. Stir in the minced garlic and ginger, cooking for around 1 minute until fragrant.
  3. Toss in the mixed vegetables and stir-fry for about 3-5 minutes, until just tender.
  4. Pour in the soy sauce and season with salt and pepper. Mix everything until well coated and cook for another minute.

Notes

For vegetarian options, substitute chicken with tofu or tempeh. Avoid overcrowding the pan to achieve the best stir fry texture. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months.
