  • 1 cup long-grain rice Uncooked
  • 2 cups chicken broth Low sodium is preferred
  • 1 can (10.5 oz) cream of chicken soup Or a non-creamy alternative
  • 1 cup mixed vegetables Like peas and carrots
  • 1 teaspoon garlic powder For flavor
  • Salt and pepper To taste
  • Fresh herbs For garnishing (optional)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Grease a 9x13-inch baking dish with a little cooking spray or oil.
  3. In a large bowl, combine the rice, chicken broth, cream of chicken soup, mixed vegetables, garlic powder, salt, and pepper. Stir to mix everything well.
Cooking
  1. Place the chicken breasts in the baking dish and pour the rice mixture over it, ensuring the chicken is well coated.
  2. Cover the baking dish with foil and bake for 25 minutes.
  3. After 25 minutes, remove the foil and bake for an additional 15-20 minutes or until the chicken is cooked through and the rice is tender.
Serving
  1. Remove from the oven and let it rest for a few minutes.
  2. Garnish with fresh herbs if desired, then serve hot and enjoy!

Notes

For ingredient substitutions, you can use cream of mushroom soup instead of cream of chicken. Keep the baking dish covered with foil initially to ensure moisture retention. Feel free to customize vegetables based on your preference.
