Preparation
- Start by patting the salmon fillets dry with a paper towel.
- In a bowl, mix the Cajun seasoning, lime juice, and olive oil.
- Place the salmon fillets in a shallow dish, and pour the marinade over them, ensuring they are well coated. Let them marinate for about 15 minutes.
Cooking the Salmon
- Heat a non-stick skillet over medium-high heat. Once hot, add a little olive oil to coat the bottom.
- Carefully place the marinated salmon fillets skin-side down in the skillet.
- Cook for about 3-5 minutes on one side until crispy, then flip and cook for an additional 3-4 minutes, or until the salmon flakes easily with a fork.
Preparing the Salsa
- In a separate bowl, combine the diced avocado, chopped red onion, and cilantro. Season with salt and pepper to taste.
- Squeeze a little lime juice over the mixture.
Serving
- Carefully transfer the cooked salmon to a plate and top with the fresh avocado salsa. Enjoy while hot.
