Ingredients
  

For the Salmon
  • 4 pieces salmon fillets (about 6 ounces each)
  • 2 tablespoons Cajun seasoning
  • 2 pieces limes (freshly squeezed) Juice only
  • 2 tablespoons olive oil Plus more for cooking
For the Avocado Salsa
  • 1 piece ripe avocado, diced
  • 1 small red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Salt, to taste
  • Pepper, to taste

Method
 

Preparation
  1. Start by patting the salmon fillets dry with a paper towel.
  2. In a bowl, mix the Cajun seasoning, lime juice, and olive oil.
  3. Place the salmon fillets in a shallow dish, and pour the marinade over them, ensuring they are well coated. Let them marinate for about 15 minutes.
Cooking the Salmon
  1. Heat a non-stick skillet over medium-high heat. Once hot, add a little olive oil to coat the bottom.
  2. Carefully place the marinated salmon fillets skin-side down in the skillet.
  3. Cook for about 3-5 minutes on one side until crispy, then flip and cook for an additional 3-4 minutes, or until the salmon flakes easily with a fork.
Preparing the Salsa
  1. In a separate bowl, combine the diced avocado, chopped red onion, and cilantro. Season with salt and pepper to taste.
  2. Squeeze a little lime juice over the mixture.
Serving
  1. Carefully transfer the cooked salmon to a plate and top with the fresh avocado salsa. Enjoy while hot.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently in a skillet over low heat or in the microwave wrapped in a damp paper towel.
