Method
 

Preparation
  1. Cook the chicken breast by boiling or grilling until fully cooked, about 15-20 minutes. Shred using two forks.
  2. In a large mixing bowl, combine the cooked shredded chicken and buffalo sauce. Stir until fully coated.
  3. Prepare rice according to package instructions to yield about 2 cups cooked.
  4. In the same bowl with buffalo chicken, add corn and black beans. Stir until combined.
Assembling
  1. In meal prep containers, start with a base of rice and top with the buffalo chicken mixture.
  2. Add diced avocado, optional cheese, and garnish with sliced green onions.
Storage
  1. Cover meal prep containers and store in the fridge for up to four days.

Notes
