Ingredients
  

For the Salad
  • 4 cups lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels
  • 1 cup black beans, drained and rinsed
  • 1 each avocado, diced
  • 1 cup shredded cheddar cheese
  • to taste tortilla chips, for topping
  • to taste sour cream, for serving
  • to taste salsa, for serving
For the Beef
  • 1 lb ground beef
  • 1 packet taco seasoning

Method
 

Cooking the Beef
  1. In a large skillet over medium heat, brown the ground beef until fully cooked, about 5-7 minutes. Make sure to crumble the beef as it cooks for an even consistency.
  2. Once the beef is browned, drain any excess fat and add the taco seasoning along with a splash of water (as per package instructions). Stir well and let it simmer for about 2-3 minutes until the sauce thickens, then remove from heat.
Preparing the Salad
  1. While the beef is simmering, chop your lettuce and prepare the cherry tomatoes, corn, black beans, and avocado.
Assembling the Salad
  1. In a large serving bowl, layer the chopped lettuce at the bottom. Next, add the cooked ground beef, followed by the tomatoes, corn, black beans, and avocado.
  2. Sprinkle the shredded cheddar cheese over the top, then add your tortilla chips for that delightful crunch. Finish with a generous dollop of sour cream and drizzle with your favorite salsa.
Serving
  1. Toss ingredients gently if desired, and serve immediately. Enjoy it fresh, or let each person customize their own salad with extra toppings!

Notes

You can substitute ground beef with ground turkey or plant-based alternatives. Prepare toppings in advance to save time.
