Preparation
- Preheat your oven to 350°F (175°C) and grease an 8-inch square pan.
- Mash the bananas in a large bowl until smooth. You want them as mushy as possible—think baby food!
- Mix in your melted butter until well combined.
- Stir in the baking soda and salt.
- Add the sugar, beating in the egg and vanilla extract until everything is well mixed.
- Gradually fold in the flour until just combined.
- Pour the batter into your prepared pan, spreading it evenly.
Baking
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for a few minutes before removing it to a wire rack to cool completely.
Notes
Store at room temperature for up to 3 days in an airtight container. Refrigerate for about a week or freeze for up to 3 months. Reheat in the microwave for about 10-15 seconds.
