  • 200 g 200g pasta (e.g., penne or fusilli) Choose your favorite type of pasta.
  • 200 g 200g feta cheese Use block feta for best results.
  • 1 can 1 can chickpeas, drained and rinsed Canned chickpeas save time.
  • 1 pint 1 pint cherry tomatoes Look for ripe, juicy tomatoes.
  • 3 cloves 3 cloves garlic, minced Fresh garlic enhances flavor.
  • 1/4 cup 1/4 cup olive oil Extra virgin olive oil adds richness.
  • Salt and pepper to taste Season according to your preference.
  • Fresh basil for garnish Optional, for a fresh touch.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Cook the pasta according to the package instructions until al dente, reserving a little pasta water.
  3. In a baking dish, combine the cherry tomatoes, chickpeas, garlic, and feta. Drizzle with olive oil and season with salt and pepper.
Cooking
  1. Bake in the preheated oven for about 30 minutes, until the tomatoes burst and the feta is golden and bubbly.
  2. Once baked, add the cooked pasta to the dish and toss together, adding reserved pasta water if needed.
  3. Garnish with fresh basil before serving.

Notes

Feel free to substitute chickpeas with another legume or add veggies. Monitor roasting time to avoid charring. Leftovers can be stored in an airtight container for up to 3 days or frozen for up to 2 months. Reheat in the oven at 350°F (175°C).
