Preparation
- Preheat the oven to 400°F (200°C).
- Cook the pasta according to the package instructions until al dente, reserving a little pasta water.
- In a baking dish, combine the cherry tomatoes, chickpeas, garlic, and feta. Drizzle with olive oil and season with salt and pepper.
Cooking
- Bake in the preheated oven for about 30 minutes, until the tomatoes burst and the feta is golden and bubbly.
- Once baked, add the cooked pasta to the dish and toss together, adding reserved pasta water if needed.
- Garnish with fresh basil before serving.
Notes
Feel free to substitute chickpeas with another legume or add veggies. Monitor roasting time to avoid charring. Leftovers can be stored in an airtight container for up to 3 days or frozen for up to 2 months. Reheat in the oven at 350°F (175°C).
