Meatball Ingredients
  • 1 lb ground chicken Ensure it's Halal-certified.
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
Topping Ingredients
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, chopped parsley, minced garlic, egg, Italian seasoning, salt, and pepper. Mix until just combined.
  3. With wet hands, scoop about 2 tablespoons of the mixture and roll into balls. Place on a baking sheet lined with parchment paper.
Baking
  1. Bake the meatballs for about 20 minutes or until they are cooked through and golden brown.
  2. Remove from the oven and pour marinara sauce over the meatballs.
  3. Sprinkle the shredded mozzarella cheese on top and return to the oven for an additional 5 minutes, or until the cheese is bubbly and melted.
  4. Let the meatballs cool slightly before serving.

Notes

These meatballs are great for meal prep. Store leftovers in an airtight container in the refrigerator for up to 4 days. They can also be frozen for up to 3 months.
