Preparation
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, chopped parsley, minced garlic, egg, Italian seasoning, salt, and pepper. Mix until just combined.
- With wet hands, scoop about 2 tablespoons of the mixture and roll into balls. Place on a baking sheet lined with parchment paper.
Baking
- Bake the meatballs for about 20 minutes or until they are cooked through and golden brown.
- Remove from the oven and pour marinara sauce over the meatballs.
- Sprinkle the shredded mozzarella cheese on top and return to the oven for an additional 5 minutes, or until the cheese is bubbly and melted.
- Let the meatballs cool slightly before serving.
Notes
These meatballs are great for meal prep. Store leftovers in an airtight container in the refrigerator for up to 4 days. They can also be frozen for up to 3 months.
