Preparation
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, chopped parsley, garlic powder, onion powder, salt, and pepper.
- Using your hands, shape the mixture into meatballs about 1.5 inches in diameter.
- Line a baking sheet with parchment paper and place the meatballs on it, ensuring they have space in between.
- Bake the meatballs for 20-25 minutes, or until golden brown and cooked through.
- In the last 5 minutes, pour marinara sauce over the meatballs and sprinkle shredded mozzarella cheese on top.
- Remove from the oven once the cheese is melted and bubbly. Serve hot.
Notes
For best results, don’t overmix the meatball mixture. Store leftovers in an airtight container for 3-4 days in the fridge or freeze for up to 3 months. Reheat in the oven for optimum texture.
