  • 1 lb ground chicken Use fresh ground chicken for the best flavor.
  • 1/2 cup breadcrumbs Optional: whole wheat or gluten-free breadcrumbs can be used.
  • 1/4 cup grated Parmesan cheese For added flavor.
  • 1/4 cup chopped fresh parsley Fresh herbs enhance the flavor.
  • 1 teaspoon garlic powder Adds depth to the flavor.
  • 1 teaspoon onion powder Adds subtle sweetness.
  • 1/2 teaspoon salt Adjust to taste.
  • 1/2 teaspoon black pepper Freshly ground is best.
  • 1 cup marinara sauce Ensure it’s alcohol-free.
  • 1 cup shredded mozzarella cheese Use low-fat for a healthier option.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, chopped parsley, garlic powder, onion powder, salt, and pepper.
  3. Using your hands, shape the mixture into meatballs about 1.5 inches in diameter.
  4. Line a baking sheet with parchment paper and place the meatballs on it, ensuring they have space in between.
  5. Bake the meatballs for 20-25 minutes, or until golden brown and cooked through.
  6. In the last 5 minutes, pour marinara sauce over the meatballs and sprinkle shredded mozzarella cheese on top.
  7. Remove from the oven once the cheese is melted and bubbly. Serve hot.

Notes

For best results, don’t overmix the meatball mixture. Store leftovers in an airtight container for 3-4 days in the fridge or freeze for up to 3 months. Reheat in the oven for optimum texture.
