  • 1 lb boneless skinless chicken breast, cut into thin strips
  • 2 tbsp soy sauce (ensure it is halal-certified)
  • 1 tbsp sesame oil (or cooking oil of choice)
  • 1 cup bell peppers, sliced (any color)
  • 1 cup broccoli florets
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 inch piece of ginger, grated
  • Salt and pepper to taste
  • Optional: sesame seeds for garnish

Method
 

Preparation
  1. In a mixing bowl, combine the chicken strips and soy sauce. Let them marinate for at least 10 minutes.
  2. While the chicken marinates, chop your bell peppers, onion, and broccoli into bite-sized pieces. Mince the garlic and grate the ginger.
Cooking
  1. In a large skillet or wok, heat the sesame oil over medium-high heat until sizzling.
  2. Add the marinated chicken to the pan in a single layer. Let it cook undisturbed for 3-4 minutes until browned, then stir and cook the other side for about another 3 minutes.
  3. Once the chicken is cooked through, toss in the bell peppers, broccoli, onion, garlic, and ginger. Stir-fry everything together for 5-7 minutes, until the vegetables are tender-crisp.
  4. Add salt and pepper to taste, and stir well to combine all the flavors.
  5. Serve immediately while hot, topped with a sprinkle of sesame seeds if desired.

Notes

Substitutions: Use any vegetables you have on hand. Timing is key for a stir-fry; keep everything moving to avoid burning. Avoid overcrowding the pan.
