- Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking pan or line it with parchment paper for easy removal.
- In a mixing bowl, combine the mashed bananas with the melted coconut oil. Stir in the brown sugar until well combined, then add the egg and vanilla extract, mixing until smooth.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredient mixture to the wet ingredients, stirring gently until just combined. Be careful not to over-mix; you want your bars to be light and fluffy!
- Fold in the chocolate chips, ensuring they are evenly distributed throughout the batter.
