  • 1/3 cup 1/3 cup melted coconut oil (or unsalted butter) Can substitute with unsalted butter.
  • 1 cup 1 cup brown sugar (lightly packed)
  • 1 large 1 large egg
  • 1 teaspoon 1 teaspoon vanilla extract
  • 1 teaspoon 1 teaspoon baking soda
  • a pinch Pinch of salt
  • 1 ½ cups 1 ½ cups all-purpose flour
  • 1 cup 1 cup chocolate chips (semi-sweet or dark) Customize with different types of chocolate chips.

Preparation
  1. Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking pan or line it with parchment paper for easy removal.
  2. In a mixing bowl, combine the mashed bananas with the melted coconut oil. Stir in the brown sugar until well combined, then add the egg and vanilla extract, mixing until smooth.
  3. In a separate bowl, whisk together the flour, baking soda, and salt.
  4. Gradually add the dry ingredient mixture to the wet ingredients, stirring gently until just combined. Be careful not to over-mix; you want your bars to be light and fluffy!
  5. Fold in the chocolate chips, ensuring they are evenly distributed throughout the batter.
  6. Pour the mixture into your prepared baking pan. Bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  7. Allow the bars to cool in the pan before slicing. Enjoy them warm or at room temperature!

Notes

Store in an airtight container at room temperature for up to three days. For longer storage, refrigerate for up to a week. Reheat in the microwave for a few seconds for a melty experience.
