Delicious Vegan Cheeseburger Wraps

Ingredients
  

For the patties
  • 1 can black beans (drained and rinsed)
  • 1 cup cooked quinoa
  • 1/2 cup breadcrumbs use whole grains for a healthier option
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • to taste salt and pepper
  • 4 slices vegan cheese
For assembly
  • 4 large tortilla wraps
  • to taste lettuce leaves
  • to taste sliced tomatoes
  • to taste your favorite condiments (like mustard, ketchup, or vegan mayo)

Method
 

Preparation
  1. In a large mixing bowl, mash the black beans with a fork until mostly smooth, leaving some chunks for texture.
  2. Add the cooked quinoa, breadcrumbs, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until well combined.
  3. Form the mixture into burger-sized patties — about 1/2 inch thick.
Cooking
  1. Heat a non-stick skillet over medium heat and add a drizzle of oil (optional).
  2. Cook the patties for 4-5 minutes on each side, or until they’re crispy and golden brown.
  3. While the patties are cooking, warm the tortilla wraps in a separate pan or microwave.
  4. Once cooked, place the vegan cheese slice on top of each patty for the last minute of cooking to melt.
Assembly
  1. Assemble your wraps by adding lettuce, a patty with melted cheese, sliced tomatoes, and any condiments you like.
  2. Roll up the tortillas tightly, slice in half, and enjoy!

Notes

For extra moisture, try adding finely chopped veggies like bell peppers or zucchini to the patty mix. Keep the assembled wraps in a warm oven until you’re ready to serve; this keeps them cozy and delicious. Double the batch and freeze extra patties for quick meals later.
